A celebratory grilled chicken recipe marinated in a zesty lemon and BBQ sauce, perfect for summer gatherings.

- 1/4 cup fresh lemon juice
- Zest of 1 lemon
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tbsp Dijon mustard
- 1 tbsp honey
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
- 2 lbs boneless, skinless chicken thighs or breasts
- 1/2 cup BBQ sauce
- 1 tbsp lemon juice
- 1 tsp olive oil
- Fresh parsley, chopped
- Lemon wedges
- Corn on the cob or grilled vegetables
- Coleslaw or potato salad
Instructions
- Combine lemon juice, lemon zest, olive oil, garlic, Dijon mustard, honey, paprika, salt, pepper, and thyme in a bowl to create the marinade.
- Add the chicken to the marinade, coat evenly, and refrigerate for at least 2 hours or overnight.
- Preheat the grill to medium-high and grease the grates with olive oil.
- Mix BBQ sauce with lemon juice in a small bowl for basting.
- Grill the marinated chicken for 6-7 minutes per side or until the internal temperature reaches 165°F (74°C), basting with BBQ sauce in the last few minutes.
- Let the chicken rest for 5 minutes, then garnish with parsley and serve with lemon wedges and sides.
Notes
For a lighter version, use chicken breasts or low-sugar BBQ sauce. Ensure the grill is properly oiled to prevent sticking.
