Description

A celebratory grilled chicken recipe marinated in a zesty lemon and BBQ sauce, perfect for summer gatherings.


Ingredients

  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 2 lbs boneless, skinless chicken thighs or breasts
  • 1/2 cup BBQ sauce
  • 1 tbsp lemon juice
  • 1 tsp olive oil
  • Fresh parsley, chopped
  • Lemon wedges
  • Corn on the cob or grilled vegetables
  • Coleslaw or potato salad

Instructions

  1. Combine lemon juice, lemon zest, olive oil, garlic, Dijon mustard, honey, paprika, salt, pepper, and thyme in a bowl to create the marinade.
  2. Add the chicken to the marinade, coat evenly, and refrigerate for at least 2 hours or overnight.
  3. Preheat the grill to medium-high and grease the grates with olive oil.
  4. Mix BBQ sauce with lemon juice in a small bowl for basting.
  5. Grill the marinated chicken for 6-7 minutes per side or until the internal temperature reaches 165°F (74°C), basting with BBQ sauce in the last few minutes.
  6. Let the chicken rest for 5 minutes, then garnish with parsley and serve with lemon wedges and sides.

Notes

For a lighter version, use chicken breasts or low-sugar BBQ sauce. Ensure the grill is properly oiled to prevent sticking.
