- 2 medium apples, diced small

Instructions
- Preheat your oven to 375°F (190°C). Grease an 8×8 casserole dish.
- In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, nutmeg, and salt, mixing them until well blended.
- In a separate medium bowl, whisk together the almond milk, eggs, maple syrup, and vanilla until you have a smooth mixture.
- Pour the wet mixture into the bowl with dry ingredients, stirring until everything is combined.
- Gently fold in the diced apples and chopped pecans, ensuring an even distribution.
- Transfer the mixture to your greased baking dish and press down gently. For an augmented presentation, top with additional apple chunks and pecans.
- Place it in the oven and bake uncovered for 40–45 minutes until the edges are golden and a toothpick comes out clean.
- Once baked, let it cool for 5–10 minutes before serving.
Notes
For a lower-sugar option, consider using stevia or monk fruit sweetener instead of maple syrup. This dish is also great for meal prepping!
