Ingredients

  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1 3/4 cups almond milk
  • 2 eggs
  • 1/3 cup pure maple syrup
  • 2 teaspoons pure vanilla extract
  • 2 medium apples, diced small
  • 1/2 cup chopped pecans

Instructions

  1. Preheat your oven to 375°F (190°C). Grease an 8×8 casserole dish.
  2. In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, nutmeg, and salt, mixing them until well blended.
  3. In a separate medium bowl, whisk together the almond milk, eggs, maple syrup, and vanilla until you have a smooth mixture.
  4. Pour the wet mixture into the bowl with dry ingredients, stirring until everything is combined.
  5. Gently fold in the diced apples and chopped pecans, ensuring an even distribution.
  6. Transfer the mixture to your greased baking dish and press down gently. For an augmented presentation, top with additional apple chunks and pecans.
  7. Place it in the oven and bake uncovered for 40–45 minutes until the edges are golden and a toothpick comes out clean.
  8. Once baked, let it cool for 5–10 minutes before serving.

Notes

For a lower-sugar option, consider using stevia or monk fruit sweetener instead of maple syrup. This dish is also great for meal prepping!
