Ingredients

  • Salt and pepper to taste
  • 1 red onion, cut into chunks
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. In a large mixing bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper to create a marinade.
  2. Toss the chicken chunks into the marinade, ensuring they are well coated. Cover and refrigerate for at least one hour or overnight for best flavor.
  3. Preheat your grill to medium-high heat.
  4. Skewer the marinated chicken onto the soaked wooden skewers, alternating with chunks of red onion and bell peppers.
  5. Grill the skewers for 8 to 10 minutes, turning occasionally until the chicken is cooked through and the vegetables are tender.
  6. Remove from the grill and serve hot with tzatziki sauce.
