Instructions
- Prepare the Apples: In a medium bowl, combine the diced apples, 2 tablespoons of granulated sugar, ground cinnamon, ground nutmeg, and lemon juice. Toss gently to coat the apples evenly. Set aside.
- Make the Batter: In a large mixing bowl, whisk together the flour, 2 tablespoons sugar, baking powder, baking soda, and salt. In another bowl, whisk the egg, buttermilk, melted butter, and 1 teaspoon vanilla until smooth. Combine the wet and dry ingredients, folding in the apple mixture until incorporated.
- Fry the Fritters: Heat oil in a pot over medium heat until it reaches 350°F (175°C). Drop spoonfuls of batter into the hot oil, frying 3-4 at a time for 2-3 minutes on each side until golden brown. Transfer to a plate lined with paper towels.
- Make the Glaze: In a mixing bowl, whisk together powdered sugar, milk (or apple cider), and 1/2 teaspoon vanilla until smooth. Adjust thickness as needed.
- Glaze the Fritters: Dip the fritters in the glaze or drizzle it over the top. Serve warm.
Notes
For added crunch, consider adding chopped pecans or walnuts. Experiment with different fruits or flavored glazes for variety.
