Description

A delightful banana bread infused with almond flavor, combining sweet ripe bananas and creamy almond paste for a comforting treat.


Ingredients

  • 3 ripe bananas, mashed
  • 2 large eggs
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 cup almond paste, softened
  • 2 tbsp unsalted butter, softened
  • 2 tbsp powdered sugar
  • 1 egg yolk
  • 1/4 tsp almond extract
  • 1/4 cup sliced almonds
  • 2 tbsp granulated sugar
  • 1 tbsp butter, melted
  • 1 tbsp milk or non-dairy alternative
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line it with parchment paper.
  2. In a small bowl, mix almond paste, softened butter, powdered sugar, egg yolk, and almond extract until smooth. Set aside.
  3. In a large bowl, whisk together mashed bananas, eggs, melted butter, granulated sugar, brown sugar, and vanilla extract until combined.
  4. In another bowl, combine flour, baking soda, salt, and ground cinnamon. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Pour half of the batter into the prepared pan, drop spoonfuls of almond filling, and swirl with a knife. Pour remaining batter over the top and smooth out.
  6. In a small bowl, stir together sliced almonds, granulated sugar, melted butter, and milk. Sprinkle topping over the batter.
  7. Bake for 55-65 minutes, or until a toothpick comes out clean or with moist crumbs. Cover loosely with foil if browning too quickly.
  8. Let the bread cool in the pan for 10-15 minutes, then use parchment to lift it onto a wire rack to cool completely. Dust with powdered sugar before serving if desired.
