- 3 ripe bananas, mashed
- 2 large eggs
- 1/2 cup unsalted butter, melted and slightly cooled
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 tsp vanilla extract

- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1/2 cup almond paste, softened
- 2 tbsp unsalted butter, softened
- 2 tbsp powdered sugar
- 1 egg yolk
- 1/4 tsp almond extract
- 1/4 cup sliced almonds
- 2 tbsp granulated sugar
- 1 tbsp butter, melted
- 1 tbsp milk or non-dairy alternative
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line it with parchment paper.
- In a small bowl, mix almond paste, softened butter, powdered sugar, egg yolk, and almond extract until smooth. Set aside.
- In a large bowl, whisk together mashed bananas, eggs, melted butter, granulated sugar, brown sugar, and vanilla extract until combined.
- In another bowl, combine flour, baking soda, salt, and ground cinnamon. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Pour half of the batter into the prepared pan, drop spoonfuls of almond filling, and swirl with a knife. Pour remaining batter over the top and smooth out.
- In a small bowl, stir together sliced almonds, granulated sugar, melted butter, and milk. Sprinkle topping over the batter.
- Bake for 55-65 minutes, or until a toothpick comes out clean or with moist crumbs. Cover loosely with foil if browning too quickly.
- Let the bread cool in the pan for 10-15 minutes, then use parchment to lift it onto a wire rack to cool completely. Dust with powdered sugar before serving if desired.
