Description

A delicious and easy banana bread recipe that doesn’t require baking soda, perfect for nostalgic moments and family fun.


Ingredients

  • 1 1/2 cups mashed ripe bananas
  • 100 g melted butter
  • 1/2 cup Greek yogurt or sour cream
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 teaspoon kosher salt
  • 1 1/2 cups all-purpose flour
  • 3 teaspoons baking powder

Instructions

  1. Preheat your oven to 180°C (350°F) and line a loaf pan with parchment paper.
  2. In a large mixing bowl, mash the bananas into a pudding-like consistency.
  3. Mix in melted butter, eggs, vanilla extract, and Greek yogurt until smooth.
  4. Add granulated sugar and brown sugar, whisking until dissolved.
  5. Sift in flour and baking powder, mixing gently until just combined.
  6. Transfer the batter into the loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
  8. Allow to cool slightly before slicing and serving.
