- 1 1/2 cups mashed ripe bananas
- 100 g melted butter
- 1/2 cup Greek yogurt or sour cream
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 teaspoon kosher salt
- 1 1/2 cups all-purpose flour
- 3 teaspoons baking powder
Instructions
- Preheat your oven to 180°C (350°F) and line a loaf pan with parchment paper.
- In a large mixing bowl, mash the bananas into a pudding-like consistency.
- Mix in melted butter, eggs, vanilla extract, and Greek yogurt until smooth.
- Add granulated sugar and brown sugar, whisking until dissolved.
- Sift in flour and baking powder, mixing gently until just combined.
- Transfer the batter into the loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
- Allow to cool slightly before slicing and serving.
