- 6 cups day-old cubed bread (French or challah)
- 3 large ripe bananas (sliced)
- 4 large eggs
- 2 cups heavy cream or half and half
- 1/2 cup brown sugar
- 1/2 cup unsalted butter (for sauce)
- 1/3 cup dark rum or vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a large baking dish.
- In a large bowl, combine the cubed bread and sliced bananas, tossing gently.
- In another bowl, whisk together the eggs, heavy cream, brown sugar, vanilla extract, and a pinch of salt until smooth.
- Pour the egg mixture over the bread and bananas, stirring gently to coat.
- Transfer the mixture into the prepared baking dish, spreading it evenly.
- Bake for 45-50 minutes until golden and set in the center.
- While baking, melt the butter in a saucepan over medium heat and stir in brown sugar and dark rum until bubbly.
- Drizzle the warm sauce over the pudding and serve.
