Description

A warm and indulgent bread pudding infused with the classic flavors of Bananas Foster, featuring caramelized bananas and a luscious rum sauce.

Ingredients

Scale
  • 6 cups day-old cubed bread (French or challah)
  • 3 large ripe bananas (sliced)
  • 4 large eggs
  • 2 cups heavy cream or half and half
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter (for sauce)
  • 1/3 cup dark rum or vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a large baking dish.
  2. In a large bowl, combine the cubed bread and sliced bananas, tossing gently.
  3. In another bowl, whisk together the eggs, heavy cream, brown sugar, vanilla extract, and a pinch of salt until smooth.
  4. Pour the egg mixture over the bread and bananas, stirring gently to coat.
  5. Transfer the mixture into the prepared baking dish, spreading it evenly.
  6. Bake for 45-50 minutes until golden and set in the center.
  7. While baking, melt the butter in a saucepan over medium heat and stir in brown sugar and dark rum until bubbly.
  8. Drizzle the warm sauce over the pudding and serve.

Notes

For best flavor, consider letting the pudding sit in the fridge for a few hours or overnight before baking.
