Description

A comforting dish featuring BBQ-glazed chicken and roasted sweet potatoes, topped with fresh greens and avocado.


Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 cups shredded rotisserie chicken
  • 1/3 cup BBQ sauce
  • 2 cups baby spinach or mixed greens
  • 1/4 cup thinly sliced red onion
  • 1/4 cup crumbled feta cheese (optional)
  • 1 avocado, sliced
  • 1 tablespoon chopped cilantro (optional)

Instructions

  1. Preheat your oven to 400 degrees F.
  2. Toss the cubed sweet potatoes in a bowl with olive oil, salt, and pepper. Spread them on a baking sheet lined with parchment paper.
  3. Roast the sweet potatoes for 25-30 minutes until tender and golden.
  4. In a small saucepan, combine the shredded chicken and BBQ sauce. Heat over medium-low until warmed through.
  5. In serving bowls, layer fresh greens, roasted sweet potatoes, BBQ chicken, red onions, avocado slices, and feta (if using). Top with chopped cilantro and serve warm.
