Ingredients

- 2 medium sweet potatoes, peeled and cubed
- 1 tablespoon olive oil
- Salt and pepper to taste
- 2 cups shredded rotisserie chicken
- 1/3 cup BBQ sauce
- 2 cups baby spinach or mixed greens
- 1/4 cup thinly sliced red onion
- 1/4 cup crumbled feta cheese (optional)
- 1 avocado, sliced
- 1 tablespoon chopped cilantro (optional)
Instructions
- Preheat your oven to 400 degrees F.
- Toss the cubed sweet potatoes in a bowl with olive oil, salt, and pepper. Spread them on a baking sheet lined with parchment paper.
- Roast the sweet potatoes for 25-30 minutes until tender and golden.
- In a small saucepan, combine the shredded chicken and BBQ sauce. Heat over medium-low until warmed through.
- In serving bowls, layer fresh greens, roasted sweet potatoes, BBQ chicken, red onions, avocado slices, and feta (if using). Top with chopped cilantro and serve warm.
Notes
Opt for low-sugar BBQ sauce for a healthier alternative. Skip the feta for a dairy-free version.
