Description

A vibrant fusion of sweet and savory flavors featuring succulent shrimp coated in barbecue glaze and paired with juicy pineapple.


Ingredients

  • 2 tablespoons Land O Lakes® Butter
  • 1 pound large shrimp, peeled and deveined
  • 1 teaspoon chopped garlic
  • 1 large bell pepper, cut into 3/4-inch pieces
  • 1 large onion, cut into 3/4-inch pieces
  • 1 (8-ounce) can pineapple tidbits, drained
  • 1/2 cup barbecue sauce
  • Hot cooked rice
  • Chopped parsley (optional)

Instructions

  1. Melt 1 tablespoon of Land O Lakes® Butter in a skillet over medium heat.
  2. Add the shrimp and chopped garlic to the skillet and cook until shrimp turn pink. Remove shrimp from pan and set it aside.
  3. Melt the remaining butter in the same skillet; add bell pepper and onion, cooking until softened.
  4. Return the shrimp to the skillet, then combine with pineapple tidbits and barbecue sauce. Stir and cook for 1-2 minutes.
  5. Serve hot over rice and garnish with fresh parsley.

Notes

For healthier alternatives, consider low-sugar barbecue sauce and dairy-free alternatives for butter.
