- 2 tablespoons Land O Lakes® Butter
- 1 pound large shrimp, peeled and deveined
- 1 teaspoon chopped garlic
- 1 large bell pepper, cut into 3/4-inch pieces
- 1 large onion, cut into 3/4-inch pieces
- 1 (8-ounce) can pineapple tidbits, drained
- 1/2 cup barbecue sauce
- Hot cooked rice
- Chopped parsley (optional)
Instructions
- Melt 1 tablespoon of Land O Lakes® Butter in a skillet over medium heat.
- Add the shrimp and chopped garlic to the skillet and cook until shrimp turn pink. Remove shrimp from pan and set it aside.
- Melt the remaining butter in the same skillet; add bell pepper and onion, cooking until softened.
- Return the shrimp to the skillet, then combine with pineapple tidbits and barbecue sauce. Stir and cook for 1-2 minutes.
- Serve hot over rice and garnish with fresh parsley.
