Ingredients

  • 1 pound beef stew meat, cut into small cubes
  • 1 cup barley
  • 4 cups beef broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 cups mixed vegetables (like peas and corn)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the beef and cook until browned on all sides.
  2. Add the onion and garlic, cooking until the onion becomes translucent.
  3. Stir in the carrots and celery, cooking for an additional five minutes.
  4. Add the barley, beef broth, and seasonings. Bring to a boil.
  5. Reduce heat to low, cover, and let it simmer for about an hour or until the beef and barley are tender.
  6. In the last 10 minutes, stir in the mixed vegetables.
