- 1 pound beef stew meat, cut into small cubes
- 1 cup barley
- 4 cups beef broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 cups mixed vegetables (like peas and corn)
Instructions
- In a large pot, heat olive oil over medium heat. Add the beef and cook until browned on all sides.
- Add the onion and garlic, cooking until the onion becomes translucent.
- Stir in the carrots and celery, cooking for an additional five minutes.
- Add the barley, beef broth, and seasonings. Bring to a boil.
- Reduce heat to low, cover, and let it simmer for about an hour or until the beef and barley are tender.
- In the last 10 minutes, stir in the mixed vegetables.
- Serve hot in bowls.
Notes
Searing the beef adds depth to the flavor. For faster cooking, consider using a pressure cooker or pre-cooked beef.
