Description
An enchanting dessert that features deep layers of chocolate cake interspersed with fresh blackberries and topped with a glossy dark chocolate ganache.

- 2 cups all-purpose flour
- 1 cup unsweetened cocoa powder
- 1 ½ cups granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 4 large eggs
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- 1 ½ cups fresh blackberries, plus extra for garnish
- 1 tablespoon lemon juice
- 1 cup heavy cream
- 10 ounces dark chocolate, chopped
- 2 tablespoons corn syrup
- 1 teaspoon vanilla extract (for ganache)
Instructions
- Preheat your oven to 350°F (180°C). Grease and flour two 9-inch round cake pans and set aside.
- In a large mixing bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt until well combined.
- Cream softened butter and sugar using an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
- Add eggs, one at a time, mixing well after each. Mix in buttermilk and vanilla extract until smooth.
- Gradually add dry ingredients to the wet mixture, mixing on low speed until just combined.
- Toss blackberries with lemon juice and fold them into the batter.
- Divide the batter evenly between the prepared pans and smooth the tops.
- Bake for 25-30 minutes, or until a toothpick inserted comes out clean. Allow cakes to cool in pans for 10 minutes, then turn them out to cool completely on a wire rack.
- While the cakes cool, prepare the ganache by heating heavy cream until simmering, then adding chocolate, corn syrup, and vanilla. Stir until smooth.
- Spread a layer of ganache on top of one cake layer, then stack the second layer and cover the cake with remaining ganache.
- Decorate the top with fresh blackberries as desired.
- Allow ganache to set for about 30 minutes before slicing and serving.
Notes
To enhance the flavor, add a tablespoon of strong brewed coffee to the batter. Use room temperature ingredients for best results.
