Description

An enchanting dessert that features deep layers of chocolate cake interspersed with fresh blackberries and topped with a glossy dark chocolate ganache.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 ½ cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 ½ cups fresh blackberries, plus extra for garnish
  • 1 tablespoon lemon juice
  • 1 cup heavy cream
  • 10 ounces dark chocolate, chopped
  • 2 tablespoons corn syrup
  • 1 teaspoon vanilla extract (for ganache)

Instructions

  1. Preheat your oven to 350°F (180°C). Grease and flour two 9-inch round cake pans and set aside.
  2. In a large mixing bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt until well combined.
  3. Cream softened butter and sugar using an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
  4. Add eggs, one at a time, mixing well after each. Mix in buttermilk and vanilla extract until smooth.
  5. Gradually add dry ingredients to the wet mixture, mixing on low speed until just combined.
  6. Toss blackberries with lemon juice and fold them into the batter.
  7. Divide the batter evenly between the prepared pans and smooth the tops.
  8. Bake for 25-30 minutes, or until a toothpick inserted comes out clean. Allow cakes to cool in pans for 10 minutes, then turn them out to cool completely on a wire rack.
  9. While the cakes cool, prepare the ganache by heating heavy cream until simmering, then adding chocolate, corn syrup, and vanilla. Stir until smooth.
  10. Spread a layer of ganache on top of one cake layer, then stack the second layer and cover the cake with remaining ganache.
  11. Decorate the top with fresh blackberries as desired.
  12. Allow ganache to set for about 30 minutes before slicing and serving.

Notes

To enhance the flavor, add a tablespoon of strong brewed coffee to the batter. Use room temperature ingredients for best results.
