Description

Ingredients

  • 1 cup blueberries
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 package puff pastry (thawed)
  • 1 egg (for egg wash)
  • 1/4 cup sugar
  • 1/2 cup cream cheese
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together the blueberries, lemon juice, lemon zest, and sugar.
  3. Roll out the puff pastry and cut it into squares.
  4. In the center of each square, add a dollop of cream cheese and a spoonful of the blueberry mixture, then fold the corners to create a pocket.
  5. Brush the tops with egg wash.
  6. Bake for 20-25 minutes or until golden brown.
  7. Allow to cool slightly, then sprinkle with powdered sugar and serve.
