- 2 cups fresh blueberries
- 2 ripe peaches, diced
- 1 Persian cucumber, thinly sliced
- 1/2 cup crumbled feta cheese
- 2 tablespoons fresh lemon juice
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 3 tablespoons extra virgin olive oil
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- Wash the blueberries thoroughly and remove any stems. Dice the peaches into bite-sized chunks.
- Slice the Persian cucumber into thin rounds.
- In a large bowl, combine blueberries, diced peaches, and cucumber slices, folding gently.
- In a small bowl, whisk together lemon juice, Dijon mustard, and honey.
- Slowly drizzle in olive oil while whisking continuously to create an emulsion. Fold in chopped basil and season with salt and pepper.
- Pour the vinaigrette over the fruit mixture and toss gently.
- Sprinkle crumbled feta over the salad and give it a final gentle toss.
- Serve immediately for the best flavor experience.
