Description

A refreshing summer salad that combines the sweetness of peaches and tartness of blueberries with creamy feta cheese.


Ingredients

  • 2 cups fresh blueberries
  • 2 ripe peaches, diced
  • 1 Persian cucumber, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 3 tablespoons extra virgin olive oil
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Wash the blueberries thoroughly and remove any stems. Dice the peaches into bite-sized chunks.
  2. Slice the Persian cucumber into thin rounds.
  3. In a large bowl, combine blueberries, diced peaches, and cucumber slices, folding gently.
  4. In a small bowl, whisk together lemon juice, Dijon mustard, and honey.
  5. Slowly drizzle in olive oil while whisking continuously to create an emulsion. Fold in chopped basil and season with salt and pepper.
  6. Pour the vinaigrette over the fruit mixture and toss gently.
  7. Sprinkle crumbled feta over the salad and give it a final gentle toss.
  8. Serve immediately for the best flavor experience.
