- Brownie Layer:
- 3/4 cup unsalted butter, cut into large pieces, plus more for greasing the pan
- 8 oz. bittersweet chocolate chips
- 4 large eggs, at room temperature
- 2 1/4 cups granulated sugar
- 1/3 cup dark cocoa powder
- 1 tsp. pure vanilla extract
- 1/4 tsp. kosher salt
- 1 cup all-purpose flour
- Cookie Layer:
- 1 cup all-purpose flour
- 1/2 tsp. baking soda
- 1/2 tsp. kosher salt
- 1/2 cup unsalted butter, at room temperature, plus more for greasing the pan
- 1/2 cup packed light brown sugar
- 1/4 cup granulated sugar
- 1 large egg, at room temperature
- 1 tsp. pure vanilla extract
- 6 oz. bittersweet chocolate chips, plus more for sprinkling
- Ice Cream:
- 1 1/2 qt. vanilla ice cream
Instructions
- Preheat oven to 350°F (175°C). Grease a 13″x9″ baking pan with butter, and line with parchment paper.
- Melt chocolate and butter together over simmering water in a medium bowl, stirring until smooth. Allow to cool slightly.
- In a large bowl, whisk eggs, granulated sugar, cocoa powder, vanilla, and salt. Add cooled chocolate mixture, then gently fold in flour until just combined.
- Pour the brownie batter into the prepared pan.
- In another bowl, whisk together flour, baking soda, and salt for the cookie layer.
- Beat butter with brown and granulated sugars until light and fluffy. Add egg and vanilla, beating until combined.
- Fold in dry ingredients and chocolate chips to create cookie dough.
- Scoop cookie dough dollops onto brownie batter, swirling gently without overmixing.
- Cover and bake for 55 minutes, then uncover and bake until golden and set.
- Allow to cool, then slice into bars. Slice each bar in half widthwise, scoop ice cream onto one half, and cover with the other half.
- Freeze until firm. Serve after standing for a few minutes.
Notes
Experiment with different ice cream flavors like mint chocolate chip or cookies and cream.
