A delightful blend of brownies and cookies, filled with creamy ice cream for the ultimate indulgent treat.


Ingredients

  • Brownie Layer:
  • 3/4 cup unsalted butter, cut into large pieces, plus more for greasing the pan
  • 8 oz. bittersweet chocolate chips
  • 4 large eggs, at room temperature
  • 2 1/4 cups granulated sugar
  • 1/3 cup dark cocoa powder
  • 1 tsp. pure vanilla extract
  • 1/4 tsp. kosher salt
  • 1 cup all-purpose flour
  • Cookie Layer:
  • 1 cup all-purpose flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. kosher salt
  • 1/2 cup unsalted butter, at room temperature, plus more for greasing the pan
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg, at room temperature
  • 1 tsp. pure vanilla extract
  • 6 oz. bittersweet chocolate chips, plus more for sprinkling
  • Ice Cream:
  • 1 1/2 qt. vanilla ice cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 13″x9″ baking pan with butter, and line with parchment paper.
  2. Melt chocolate and butter together over simmering water in a medium bowl, stirring until smooth. Allow to cool slightly.
  3. In a large bowl, whisk eggs, granulated sugar, cocoa powder, vanilla, and salt. Add cooled chocolate mixture, then gently fold in flour until just combined.
  4. Pour the brownie batter into the prepared pan.
  5. In another bowl, whisk together flour, baking soda, and salt for the cookie layer.
  6. Beat butter with brown and granulated sugars until light and fluffy. Add egg and vanilla, beating until combined.
  7. Fold in dry ingredients and chocolate chips to create cookie dough.
  8. Scoop cookie dough dollops onto brownie batter, swirling gently without overmixing.
  9. Cover and bake for 55 minutes, then uncover and bake until golden and set.
  10. Allow to cool, then slice into bars. Slice each bar in half widthwise, scoop ice cream onto one half, and cover with the other half.
  11. Freeze until firm. Serve after standing for a few minutes.

Notes

Experiment with different ice cream flavors like mint chocolate chip or cookies and cream.
