Description

Tender steak bites are swooned in rich butter and paired with perfectly roasted garlic herb potatoes, creating a comforting and indulgent meal.


Ingredients

  • 1 lb sirloin or ribeye steak cut into bite-sized pieces
  • 1 lb baby potatoes, halved
  • 4 cloves fresh garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss halved baby potatoes in a bowl with olive oil, minced garlic, rosemary, thyme, salt, and pepper.
  3. Spread the seasoned potatoes on a baking sheet.
  4. Roast the potatoes for 25-30 minutes until golden and crispy, flipping halfway through.
  5. In a skillet over medium-high heat, melt the butter.
  6. Season the steak bites with salt and pepper, and sear for 3-4 minutes per side until cooked to your liking.
  7. Combine roasted potatoes with steak bites in a serving dish and drizzle remaining melted butter over the top.

Notes

Leftovers can be frozen for quick meals later. Reheat in the oven to maintain crispiness.
