Ingredients

- 1 lb sirloin or ribeye steak cut into bite-sized pieces
- 1 lb baby potatoes, halved
- 4 cloves fresh garlic, minced
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 4 tbsp unsalted butter
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Toss halved baby potatoes in a bowl with olive oil, minced garlic, rosemary, thyme, salt, and pepper.
- Spread the seasoned potatoes on a baking sheet.
- Roast the potatoes for 25-30 minutes until golden and crispy, flipping halfway through.
- In a skillet over medium-high heat, melt the butter.
- Season the steak bites with salt and pepper, and sear for 3-4 minutes per side until cooked to your liking.
- Combine roasted potatoes with steak bites in a serving dish and drizzle remaining melted butter over the top.
Notes
Leftovers can be frozen for quick meals later. Reheat in the oven to maintain crispiness.
