Ingredients

- 1 medium head green or red cabbage, shredded
- 2 apples, sliced
- 1/3 cup walnuts or pecans, toasted and chopped
- 1/4 cup Parmesan cheese, shaved or 1/3 cup crumbled cheddar
- 3 tablespoons extra virgin olive oil
- 2 tablespoons apple cider vinegar
- 2 teaspoons honey
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- Freshly cracked black pepper
Instructions
- Slice the cabbage and add to a large salad bowl.
- Slice the apples and add to the salad bowl.
- Toast the walnuts in a pan for about five minutes, chop them, and add to the salad.
- Combine dressing ingredients in a jar, shake until well mixed, and pour over salad.
- Sprinkle half of the cheese over the salad, toss gently, and let rest for 10 minutes before serving.
