Description

Gooey, chocolatey Carmelita Cookies filled with caramel bits, perfect for indulging any time.


Ingredients

  • 1 cup salted butter, softened
  • 1 cup brown sugar
  • 1/3 cup granulated sugar
  • 2 eggs
  • 1 3/4 cup all-purpose flour
  • 2 1/2 tsp cornstarch
  • 2 cups rolled oats
  • 1 1/2 tsp cinnamon
  • 1 1/4 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup semisweet chocolate chunks
  • 3/4 cup Kraft caramel bits
  • Ghirardelli caramel sauce for drizzling

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened salted butter, brown sugar, and granulated sugar until light and fluffy, about 2 minutes.
  3. Add eggs one at a time, mixing thoroughly after each addition.
  4. In another bowl, whisk together the all-purpose flour, cornstarch, oats, cinnamon, baking soda, and salt, then gradually mix into the butter-sugar mixture until just combined.
  5. Fold in the semisweet chocolate chunks and Kraft caramel bits.
  6. Scoop dough balls onto a lined baking sheet, placing 5 per tray. Bake for 13-15 minutes until golden around the edges.
  7. Let the cookies cool on the pan for 15-20 minutes, then drizzle with Ghirardelli caramel sauce.

Notes

For a lighter version, consider using applesauce instead of half the butter and coconut sugar for brown sugar.
