- 2 Red Apples, sliced
- 2 Green Apples, sliced
- 2 cups Matchstick Carrots
- 1 cup Full-Fat Vanilla Yogurt
- 1/2 cup Dried Cranberries
- 1 cup Mandarin Segments
- 1/4 cup Onion, finely diced
- 1/2 cup Mayonnaise
- 1 tablespoon Sugar
- 1/2 teaspoon Salt
- 1/4 teaspoon Pepper
- 1 tablespoon Lemon Juice
Instructions
- Wash and prepare the apples by cutting them into matchsticks and tossing them with lemon juice.
- In a bowl, combine the matchstick carrots and apples, then add the diced onion and dried cranberries.
- In a separate bowl, whisk together the yogurt and mayonnaise, then season with sugar, salt, and pepper.
- Pour the dressing over the salad, fold in the mandarin segments, and refrigerate for at least 3 hours.
