Instructions
- Preheat your oven to 350°F (175°C) and lightly grease two 9-inch round baking pans with butter or cooking spray.
- In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt until combined.
- Create a well in the center of the dry ingredients and add vegetable oil, eggs, and grated carrots. Stir until just combined.
- If using, fold in chopped walnuts or pecans.
- Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
