Description

A vibrant and refreshing carrot slaw that combines sweet, crunchy carrots with tangy and zesty flavors, perfect for any meal.


Ingredients

  • 4 medium carrots, peeled and sliced into thin strips
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon honey or maple syrup
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1/4 teaspoon chili flakes
  • 1/4 teaspoon salt
  • 1 tablespoon sesame seeds
  • 2 scallions, sliced

Instructions

  1. Peel the carrots and create long, skinny strips.
  2. In a small bowl, whisk together rice vinegar, soy sauce, honey, lime juice, chili flakes, and salt until well combined.
  3. Pour the sauce over the carrot strips and toss gently to coat.
