- 4 large flour tortillas
- 2 cups mashed potatoes
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup black beans (cooked and drained)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Sour cream and salsa for serving (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the mashed potatoes, shredded cheese, black beans, garlic powder, onion powder, salt, and pepper. Mix well.
- Lay a tortilla flat on your countertop and spoon a generous portion of the potato mixture onto the center.
- Fold the sides of the tortilla over the filling and roll it up tight from the bottom.
- Place the burrito seam side down in a baking dish.
- Repeat with remaining tortillas and filling, arranging them snugly in the dish.
- Bake for about 20-25 minutes until golden and crisp.
- Serve with sour cream and salsa on the side.
Notes
For a quicker meal, use store-bought mashed potatoes. Be sure to drain the black beans well to avoid a watery filling.
