Description

Deliciously creamy and cheesy burritos filled with mashed potatoes and black beans, wrapped in a soft tortilla.


Ingredients

  • 4 large flour tortillas
  • 2 cups mashed potatoes
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup black beans (cooked and drained)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Sour cream and salsa for serving (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the mashed potatoes, shredded cheese, black beans, garlic powder, onion powder, salt, and pepper. Mix well.
  3. Lay a tortilla flat on your countertop and spoon a generous portion of the potato mixture onto the center.
  4. Fold the sides of the tortilla over the filling and roll it up tight from the bottom.
  5. Place the burrito seam side down in a baking dish.
  6. Repeat with remaining tortillas and filling, arranging them snugly in the dish.
  7. Bake for about 20-25 minutes until golden and crisp.
  8. Serve with sour cream and salsa on the side.

Notes

For a quicker meal, use store-bought mashed potatoes. Be sure to drain the black beans well to avoid a watery filling.
