- 2 medium potatoes, peeled and sliced thinly
- 3 cups fresh spinach, chopped
- 4 large eggs
- 1 cup milk
- 1 cup shredded cheese (cheddar or your choice)
- Salt and pepper to taste
- 1 pre-made pie crust
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat the olive oil or butter over medium heat. Add the finely chopped onion and minced garlic, sautéing until softened and fragrant.
- Add the sliced potatoes to the skillet and cook until they are slightly tender.
- Stir in the chopped spinach and continue to cook until it wilts.
- In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Place the pie crust in a pie dish and press it into the corners and edges.
- Layer the cooked potato and spinach mixture evenly across the base of the pie crust.
- Pour the egg mixture over the vegetables and sprinkle the shredded cheese on top.
- Bake the quiche for 30-35 minutes, until the filling is set and the top is golden.
- Allow it to cool slightly before slicing and serving.
