Description

A delightful quiche featuring earthy potatoes and vibrant spinach, enveloped in a creamy egg custard and topped with melted cheese.


Ingredients

  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil or butter
  • 2 medium potatoes, peeled and sliced thinly
  • 3 cups fresh spinach, chopped
  • 4 large eggs
  • 1 cup milk
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • 1 pre-made pie crust

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat the olive oil or butter over medium heat. Add the finely chopped onion and minced garlic, sautéing until softened and fragrant.
  3. Add the sliced potatoes to the skillet and cook until they are slightly tender.
  4. Stir in the chopped spinach and continue to cook until it wilts.
  5. In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  6. Place the pie crust in a pie dish and press it into the corners and edges.
  7. Layer the cooked potato and spinach mixture evenly across the base of the pie crust.
  8. Pour the egg mixture over the vegetables and sprinkle the shredded cheese on top.
  9. Bake the quiche for 30-35 minutes, until the filling is set and the top is golden.
  10. Allow it to cool slightly before slicing and serving.
