Ingredients

  • 2 cans canned tomatoes (whole or diced)
  • 4 cups vegetable broth
  • 1 cup cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh basil, chopped

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add chopped onions and sauté until soft, about 3-4 minutes, then add minced garlic and cook for 1 more minute.
  3. Stir in canned tomatoes and vegetable broth; bring to a simmer.
  4. Add tortellini and cook according to package instructions, about 3-5 minutes.
  5. Lower heat and stir in cheese until melted.
  6. Season with salt, pepper, and basil; adjust seasoning to taste.
  7. Ladle the soup into bowls and garnish with more basil or cheese.
