Ingredients

- 2 cups cooked chicken, shredded
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup mixed vegetables (carrots, peas, and bell peppers)
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 onion, chopped
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- In a large skillet, melt butter over medium heat. Add the chopped onion and sauté until translucent.
- Stir in the flour and cook for 1-2 minutes. Gradually whisk in the chicken broth and heavy cream, cooking until the sauce thickens.
- Add the shredded chicken and mixed vegetables, cooking until heated through. Season with salt and pepper.
- Serve the Chicken Fricassee over cooked rice, allowing the sauce to soak into the rice.
