Description

A classic comfort food that combines tender chicken, hearty vegetables, and flavorful broth for a nourishing meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 large carrots, sliced
  • 2 celery stalks, sliced
  • 8 cups chicken broth
  • 1 pound boneless, skinless chicken breasts
  • 8 ounces egg noodles
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional for garnish)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sauté until the onion is translucent.
  3. Stir in the sliced carrots and celery, cooking for an additional 5 minutes.
  4. Pour in the chicken broth and add the chicken breasts.
  5. Stir in dried thyme, dried parsley, bay leaf, and season with salt and pepper.
  6. Bring to a gentle boil, then reduce to a simmer for about 20 minutes.
  7. Remove chicken, shred it, and return to the soup.
  8. Add the egg noodles and let simmer for another 10 minutes until noodles are tender.
  9. Adjust seasoning if needed and serve hot, garnished with parsley.

Notes

For a richer flavor, use homemade broth. Leftover rotisserie chicken can be used to save time.
