- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 large carrots, sliced
- 2 celery stalks, sliced
- 8 cups chicken broth
- 1 pound boneless, skinless chicken breasts
- 8 ounces egg noodles
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley, chopped (optional for garnish)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, sauté until the onion is translucent.
- Stir in the sliced carrots and celery, cooking for an additional 5 minutes.
- Pour in the chicken broth and add the chicken breasts.
- Stir in dried thyme, dried parsley, bay leaf, and season with salt and pepper.
- Bring to a gentle boil, then reduce to a simmer for about 20 minutes.
- Remove chicken, shred it, and return to the soup.
- Add the egg noodles and let simmer for another 10 minutes until noodles are tender.
- Adjust seasoning if needed and serve hot, garnished with parsley.
Notes
For a richer flavor, use homemade broth. Leftover rotisserie chicken can be used to save time.
