- 4 boneless skinless chicken breasts
- 4 cloves fresh garlic, finely minced
- 4 tablespoons unsalted butter
- 2 tablespoons extra virgin olive oil
- 1 cup low sodium chicken broth
- 2 tablespoons low sodium soy sauce
- 1 cup long grain white rice
- 1/2 cup freshly grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and pepper, to taste
Instructions
- Gather and prepare all ingredients. Trim excess fat from the chicken breasts and mince the garlic.
- In a medium saucepan, bring 2 cups of water to a boil. Add the rice and a pinch of salt, then reduce the heat to low and cover, cooking for about 18 minutes.
- In a large skillet over medium-high heat, melt 2 tablespoons of unsalted butter and 2 tablespoons of olive oil. Season the chicken with salt and pepper, searing for about 6 minutes on each side until golden brown. Remove chicken and set aside.
- In the same skillet, add the remaining butter and minced garlic, sautéing until fragrant (about 1 minute). Stir in the chicken broth and soy sauce.
- Return the chicken to the skillet, allowing it to simmer in the sauce for an additional 3 minutes. Fluff the rice with a fork, mixing in Parmesan cheese and parsley.
- Serve the rice topped with the chicken scampi, drizzling any remaining sauce over the top.
Notes
For a lighter version, substitute chicken broth with low-sodium options and use dairy-free butter for the sauce.
