Ingredients

  • 4 medium potatoes, diced
  • 1 pound ground beef
  • 1 cup shredded cheddar cheese
  • 1 can chili beans, drained
  • 1 onion, chopped
  • 1 bell pepper, diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional toppings: Sour cream and green onions

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced potatoes and cook until golden and crispy, stirring occasionally, for about 10-15 minutes.
  3. Push the potatoes to one side of the skillet. On the other side, add the chopped onion and bell pepper. Cook for a few minutes until softened.
  4. Add the ground beef to the skillet, breaking it up as it cooks. Season lightly with salt and pepper and continue cooking until browned, about 5-7 minutes.
  5. Stir in the chili beans and cook until heated through, about 3-4 minutes.
  6. Top the skillet with shredded cheddar cheese. Cover and let it cook for another 2-3 minutes until melted.
  7. Serve warm, garnished with sour cream and chopped green onions.

Notes

For extra flavor, consider adding a teaspoon of paprika or chili powder. Optional extras include black olives or jalapeños.
