- 4 medium potatoes, diced
- 1 pound ground beef
- 1 cup shredded cheddar cheese
- 1 can chili beans, drained
- 1 onion, chopped
- 1 bell pepper, diced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional toppings: Sour cream and green onions
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the diced potatoes and cook until golden and crispy, stirring occasionally, for about 10-15 minutes.
- Push the potatoes to one side of the skillet. On the other side, add the chopped onion and bell pepper. Cook for a few minutes until softened.
- Add the ground beef to the skillet, breaking it up as it cooks. Season lightly with salt and pepper and continue cooking until browned, about 5-7 minutes.
- Stir in the chili beans and cook until heated through, about 3-4 minutes.
- Top the skillet with shredded cheddar cheese. Cover and let it cook for another 2-3 minutes until melted.
- Serve warm, garnished with sour cream and chopped green onions.
Notes
For extra flavor, consider adding a teaspoon of paprika or chili powder. Optional extras include black olives or jalapeños.
