Ingredients

  • Romaine lettuce
  • Cooked chicken
  • Carrots
  • Edamame
  • Roasted red peppers
  • Fresh cilantro
  • Cashews
  • Peanut butter
  • Red pepper flakes
  • Honey
  • Soy sauce
  • Rice vinegar
  • Sesame oil
  • Olive oil

Instructions

  1. Heat a pan over medium-high heat and lightly coat it with olive oil. Add the carrots and edamame, cooking until they show hints of char, about 5-8 minutes. Allow to cool completely.
  2. In a mixing bowl, whisk together the peanut butter, honey, soy sauce, rice vinegar, sesame oil, and red pepper flakes until smooth.
  3. In a large bowl, combine chopped romaine, diced chicken, cooled roasted vegetables, roasted red peppers, freshly chopped cilantro, and crunchy cashews. Pour the dressing around the edges of the bowl and toss everything together.

Notes
