  • 1 cup black beans (drained and rinsed)
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1 sliced avocado (optional)
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 2 finely chopped chipotle peppers in adobo
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil
  • Smoked paprika

Instructions

  1. Prepare the Chipotle Ranch Sauce: Combine the mayonnaise, sour cream, chipotle peppers, lime juice, garlic powder, salt, and pepper in a bowl. Mix until smooth and refrigerate for flavors to meld.
  2. Marinate and Grill the Chicken: Drizzle chicken with olive oil, then season with salt, pepper, smoked paprika, and lime juice. Marinate for 15 minutes. Grill the chicken for 5-7 minutes on each side until cooked through. Let rest before slicing.
  3. Prepare Fillings: Cook rice and add lime juice and cilantro. Warm black beans, dice tomatoes, shred lettuce, and slice avocado if desired.
  4. Assemble the Burritos: Spread chipotle ranch sauce on a tortilla and layer with rice, beans, chicken, cheese, lettuce, tomatoes, and avocado. Fold and roll tightly.
  5. Toast the Burrito (Optional): Toast in a skillet for 1-2 minutes per side until crispy.
