- 3/4 Cup Cocoa Powder
- 1 tsp. Baking Soda
- 1 tsp. Kosher Salt
- 1 Cup Hot Coffee
- 1 Cup Granulated Sugar
- 1/2 Cup Packed Brown Sugar
- 3/4 Cup Vegetable Oil
- 1/2 Cup Sour Cream
- 2 Cups Chocolate Chips
- 1 Cup Heavy Cream
- Sprinkles, for decorating
Instructions
- Preheat your oven to 350°F (175°C).
- Line two 9-inch cake pans with parchment paper and generously grease them with cooking spray.
- In a large bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In a large measuring cup, whisk together hot coffee, granulated sugar, and brown sugar until well combined.
- Add vegetable oil and sour cream, whisking until incorporated.
- Pour the liquid mixture into the dry ingredients and gently whisk until just combined.
- Divide the batter evenly between prepared pans.
- Bake for 20 to 22 minutes, or until a toothpick inserted comes out clean.
- Allow cakes to cool in the pans for 15 minutes, then invert onto a wire rack to cool completely.
- For the ganache, place chocolate chips in a bowl. Heat heavy cream until bubbling and pour over chocolate. Let sit for 1 minute then whisk until smooth. Cool to thicken.
- Beat ganache until light in color and thick (about 5-10 minutes).
- Layer the cake, spreading half the ganache between layers and the remaining on top. Decorate with sprinkles.
