Description

A rich and indulgent brioche bread filled with gooey chocolate chips, perfect for breakfast or brunch.


Ingredients

Scale
  • 3 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tsp salt
  • 1 tbsp instant yeast
  • 1/2 cup warm milk (around 110°F)
  • 4 large eggs, room temperature
  • 10 tbsp unsalted butter, softened and cut into pieces
  • 1 cup semi-sweet chocolate chips
  • 1 egg yolk + 1 tbsp milk (for egg wash)
  • Powdered sugar (optional)

Instructions

  1. Make the Dough: In a stand mixer, combine flour, sugar, salt, and yeast. Add warm milk and eggs, mixing on low then medium speed. Knead for 4-5 minutes, add softened butter gradually, knead for 8-10 minutes until glossy.
  2. First Rise: Transfer to a greased bowl, cover, and let rise in a warm place for 1 1/2 to 2 hours.
  3. Chill the Dough: Punch down the dough, cover, and refrigerate for at least 1 hour or overnight.
  4. Add the Chocolate Chips: Turn out the chilled dough, flatten it and sprinkle the chocolate chips. Gently knead to distribute.
  5. Shape the Bread: Divide into three pieces, roll each into ropes, braid them together, and place in a greased loaf pan.
  6. Second Rise: Cover soft dough and let rise for 1 to 1 1/2 hours.
  7. Egg Wash & Bake: Preheat oven to 350°F. Mix egg yolk and milk, brush the mixture on top. Bake for 30-35 minutes until golden brown.
  8. Cool & Serve: Cool the bread for 10 minutes before transferring to a rack. Dust with powdered sugar if desired.

Notes

Great for breakfast or dessert; serve warm or toasted. Can freeze leftover bread for up to 3 months.
