Description

Delightful brioches combining buttery dough, luscious vanilla custard, and sweet chocolate chips for a perfect treat.


Ingredients

  • 3 1/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 packet active dry yeast
  • 1/2 tsp salt
  • 4 large eggs
  • 1/4 cup whole milk
  • 10 tbsp unsalted butter
  • 3/4 cup semi-sweet chocolate chips
  • 1 1/2 cups whole milk (for custard)
  • 1/2 cup granulated sugar (for custard)
  • 1/4 cup cornstarch
  • 4 large egg yolks
  • 1 tsp vanilla extract
  • 2 tbsp unsalted butter (for custard)
  • 1 egg and 2 tbsp milk (for egg wash)
  • Chocolate chips (for garnish)
  • Powdered sugar (for dusting)

Instructions

  1. Prepare the custard by whisking together egg yolks, sugar, and cornstarch. Gradually add whole milk and heat, stirring until thickened. Remove from heat, stir in vanilla and butter, and cool.
  2. Activate yeast by combining lukewarm milk with sugar and sprinkling yeast on top. Let sit until foamy, about 5–10 minutes.
  3. Make dough by mixing flour, sugar, and salt in a mixer. Add eggs and yeast mixture, then knead, gradually adding softened butter for 8–10 minutes until smooth.
  4. Let dough rise in a greased bowl, covered, in a warm place for 1.5 to 2 hours or refrigerate overnight for better flavor.
  5. Punch down dough, knead in chocolate chips, divide into 12 pieces, and shape into balls. Place in greased muffin tins, let rise for another 45–60 minutes.
  6. Preheat oven to 350°F (175°C). Brush risen brioches with egg wash and bake for 20–25 minutes until golden.
  7. Cool slightly, make holes in the brioches, and fill with cooled custard.
  8. Dust with powdered sugar and garnish with extra chocolate chips before serving.

Notes

Consider using whole wheat flour for a healthier option. Ensure the yeast is fresh for best results.
