A vibrant and festive salad filled with fresh baby spinach, juicy pomegranate seeds, and creamy goat cheese, perfect for holiday gatherings.

- 6 cups baby spinach
- 1 cup pomegranate seeds
- 2 mandarins, segmented
- 1 cup pecans, toasted
- 1/2 cup dried cranberries
- 4 oz goat cheese, crumbled
- 1/4 cup olive oil
- 2 tbsp fresh lime juice
- 2 tbsp honey
- 1 tbsp Dijon mustard
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F. Spread the pecans on a baking sheet and toast for 5-7 minutes until fragrant. Allow to cool.
- In a mixing bowl, whisk together olive oil, honey, lime juice, and Dijon mustard. Season with salt and pepper and let the dressing sit.
- Clean and dry the baby spinach. Segment the mandarins and extract the pomegranate seeds. Bring the goat cheese to room temperature.
- In a large salad bowl, layer the spinach, mandarins, pomegranate seeds, cranberries, and toasted pecans. Crumble goat cheese on top and drizzle with dressing.
- Garnish with extra pomegranate seeds and cracked pepper. Serve the remaining dressing on the side.
Notes
For a lighter version, use agave syrup instead of honey or swap goat cheese for avocado.
