Description

A vibrant and festive salad filled with fresh baby spinach, juicy pomegranate seeds, and creamy goat cheese, perfect for holiday gatherings.


Ingredients

  • 6 cups baby spinach
  • 1 cup pomegranate seeds
  • 2 mandarins, segmented
  • 1 cup pecans, toasted
  • 1/2 cup dried cranberries
  • 4 oz goat cheese, crumbled
  • 1/4 cup olive oil
  • 2 tbsp fresh lime juice
  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F. Spread the pecans on a baking sheet and toast for 5-7 minutes until fragrant. Allow to cool.
  2. In a mixing bowl, whisk together olive oil, honey, lime juice, and Dijon mustard. Season with salt and pepper and let the dressing sit.
  3. Clean and dry the baby spinach. Segment the mandarins and extract the pomegranate seeds. Bring the goat cheese to room temperature.
  4. In a large salad bowl, layer the spinach, mandarins, pomegranate seeds, cranberries, and toasted pecans. Crumble goat cheese on top and drizzle with dressing.
  5. Garnish with extra pomegranate seeds and cracked pepper. Serve the remaining dressing on the side.

Notes

For a lighter version, use agave syrup instead of honey or swap goat cheese for avocado.
