Ingredients

  • 1 1/4 tsp. active dry yeast
  • 2 1/4 cups all-purpose flour, plus more for surface dusting
  • Kosher salt
  • Cooking spray
  • 1/2 cup baking soda
  • 3 Tbsp. unsalted butter, melted
  • 1/3 cup granulated sugar
  • 4 tsp. ground cinnamon
  • 1 cup confectioners’ sugar
  • 2 oz. cream cheese
  • 2 Tbsp. whole milk

Instructions

  1. Activate the Yeast: In a medium bowl, stir 1 tsp. of granulated sugar and 3/4 cup of warm water until dissolved. Sprinkle the active dry yeast over the mixture and let it sit for about 5 minutes until it becomes foamy.
  2. Make the Dough: In a large mixing bowl, whisk together the flour and 3/4 tsp. of kosher salt. Carefully scrape the yeast mixture into the dry ingredients and stir until a shaggy dough forms.
  3. Knead the Dough: Transfer the dough to a clean surface and knead it for about 5 minutes, until it’s smooth and elastic.
  4. Let It Rise: Lightly spray a bowl with cooking spray, place the dough in it, cover with plastic wrap, and let it rise in a warm spot until doubled, about 1 to 1.5 hours.
  5. Prepare for Baking: Preheat your oven to 450°F and line a baking sheet with parchment paper.
  6. Shape the Dough: Once the dough has risen, divide it into 4 equal pieces. Roll each piece into a long rope and cut it into 1-inch nuggets.
  7. Boil the Bites: Bring a large pot of water to a boil, then carefully stir in the baking soda. Gently drop the nuggets into the boiling water, allowing them to cook for about 30 seconds until they are light golden.
  8. Bake: Using a slotted spoon, transfer the boiled nuggets to the prepared baking sheet. Bake for 12 to 15 minutes until they are deep golden brown.
