- 1 cup butter, softened
- 2 cups sugar, divided
- 2 eggs
- 2 cups buttermilk
- 4 cups all-purpose flour
- 2 teaspoons baking soda
- 2 tablespoons ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and grease two 9×5 inch loaf pans.
- Cream together the softened butter and 1 cup of sugar until light and fluffy. Add eggs one at a time.
- Stir in buttermilk, then add flour and baking soda, mixing just until combined.
- In a small bowl, mix the remaining cup of sugar with ground cinnamon.
- Pour a quarter of the batter into each loaf pan and sprinkle half of the cinnamon sugar mixture over the batter.
- Pour the remaining batter atop the cinnamon sugar layer, and finish with the remaining cinnamon sugar mixture.
- Use a knife to swirl the cinnamon sugar into the batter.
- Bake for 45 to 50 minutes or until a toothpick comes out clean.
- Cool for 20 minutes in the pans before transferring to a wire rack.
Notes
