- 4 cups bread flour
- 2 1/4 teaspoons active dry yeast
- 1 cup whole milk
- 1/4 cup unsalted butter, melted
- 2 tablespoons ground cinnamon
- 1/2 cup sugar
- 1 teaspoon salt
- 1 egg white
Instructions
- In a small bowl, combine warm water with a pinch of sugar and sprinkle the active dry yeast on top. Let it sit until foamy.
- Heat whole milk gently and mix with slightly cooled melted unsalted butter.
- In a large mixing bowl, combine bread flour, sugar, and salt. Create a well and pour in the warm milk mixture along with foamy yeast. Stir until you get a shaggy dough.
- Turn the shaggy mass onto a floured surface and knead for 8-10 minutes.
- Place the kneaded dough in a greased bowl, cover, and let it rise in a warm spot until doubled in size.
- Punch down the dough gently and roll it out into an 8×20 inch rectangle.
- Brush the rolled-out dough with egg white and sprinkle the cinnamon-sugar mixture, leaving a border.
- Roll the dough tightly, pinching the seams to seal.
- Place the rolled dough seam-side down in a greased loaf pan, cover, and let rise again until puffed.
- Preheat the oven and bake until golden brown and the internal temperature reaches 195-200°F.
Notes
Keep an eye on your loaf while baking to prevent overbaking. Store in an airtight container for up to 2 days, or freeze individual slices.
