Instructions
- Preheat the oven to 400°F (200°C) and grease a springform pan with butter. If using a crust, press graham cracker crumbs into the bottom of the pan.
- In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract, sour cream, lemon juice, orange juice, lemon zest, and orange zest until fully combined.
- Gently fold in the mixed berries with a spatula, being careful not to overmix.
- Pour the cheesecake mixture into the prepared pan and smooth the top.
- Bake for 30-35 minutes or until the top is dark and the edges are set, while the center remains slightly jiggly.
- Turn off the oven, crack the door, and let the cheesecake cool in the oven for about an hour.
- Allow to cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
- Serve chilled and enjoy!
