Description

Ingredients

  • 1 cup granulated sugar
  • 3 large eggs

  • 1 cup sour cream
  • 1 tablespoon lemon juice
  • 1 tablespoon orange juice
  • Zest of 1 lemon
  • Zest of 1 orange
  • 1 cup mixed berries (strawberries, blueberries, raspberries)

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a springform pan with butter. If using a crust, press graham cracker crumbs into the bottom of the pan.
  2. In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy.
  3. Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract, sour cream, lemon juice, orange juice, lemon zest, and orange zest until fully combined.
  4. Gently fold in the mixed berries with a spatula, being careful not to overmix.
  5. Pour the cheesecake mixture into the prepared pan and smooth the top.
  6. Bake for 30-35 minutes or until the top is dark and the edges are set, while the center remains slightly jiggly.
  7. Turn off the oven, crack the door, and let the cheesecake cool in the oven for about an hour.
  8. Allow to cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
  9. Serve chilled and enjoy!
