An indulgent dessert that combines rich coffee flavor with a velvety custard atop a flaky pie crust.

- 1 9-inch pie crust (homemade or store-bought, pre-baked)
- 3/4 cup brewed strong coffee or espresso (cooled)
- 1 cup whole milk
- 1/2 cup heavy cream
- 3/4 cup granulated sugar
- 3 large eggs
- 2 tbsp cornstarch
- 1 tsp pure vanilla extract
- 1/4 tsp salt
- Whipped cream (for serving, optional)
- Chocolate shavings or cocoa powder (for serving, optional)
- Crushed espresso beans or cookies (for serving, optional)
Instructions
- Preheat oven to 375°F (190°C). Prepare pie crust according to package or recipe instructions and let cool.
- Brew 3/4 cup of strong coffee or espresso and let it cool.
- In a medium saucepan, combine eggs, sugar, cornstarch, and salt. Gradually whisk in whole milk, heavy cream, and cooled coffee.
- Cook over medium heat, stirring constantly for 5-7 minutes until thickened. Remove from heat and stir in vanilla extract. Strain custard if desired.
- Pour custard into pre-baked pie crust. Bake at 325°F (165°C) for 35-40 minutes until set. Let cool to room temperature, then refrigerate for at least 4 hours.
- Serve topped with whipped cream and chocolate shavings, if desired.
Notes
For a lighter version, use almond milk instead of whole milk and replace sugar with a low-sugar sweetener.
