Description

A comforting dish featuring tender conchita pasta and savory ground beef, enveloped in a rich garlic-tomato sauce.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 1 cup conchitas pasta
  • 3 cloves fresh garlic, minced
  • 2 Roma tomatoes, quartered
  • 1 cup chicken broth
  • 1 cup tomato sauce
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 cup frozen carrots
  • 2 bay leaves
  • Salt and pepper to taste
  • Optional: red pepper flakes or diced jalapenos

Instructions

  1. Heat a heavy-bottomed pot over medium heat and coat with olive oil.
  2. Add ground beef and cook until browned, seasoning with salt and pepper.
  3. Stir in conchitas, minced garlic, quartered tomatoes, chicken broth, tomato sauce, and cumin. Mix well.
  4. Lower the heat, cover partially, and let simmer for 20 minutes, stirring every five minutes.
  5. Add oregano, frozen carrots, and bay leaves. Simmer for another 15 minutes.
  6. In the last five minutes, add chopped white onion and stir well.
  7. Serve over cooked white rice or enjoy directly from the pot, optionally garnished with oregano.

Notes

For a lighter option, substitute ground beef with ground turkey or use whole grain conchitas for added fiber.
