- 2 tablespoons olive oil
- 1 pound ground beef
- 1 cup conchitas pasta
- 3 cloves fresh garlic, minced
- 2 Roma tomatoes, quartered
- 1 cup chicken broth
- 1 cup tomato sauce
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 cup frozen carrots
- 2 bay leaves
- Salt and pepper to taste
- Optional: red pepper flakes or diced jalapenos
Instructions
- Heat a heavy-bottomed pot over medium heat and coat with olive oil.
- Add ground beef and cook until browned, seasoning with salt and pepper.
- Stir in conchitas, minced garlic, quartered tomatoes, chicken broth, tomato sauce, and cumin. Mix well.
- Lower the heat, cover partially, and let simmer for 20 minutes, stirring every five minutes.
- Add oregano, frozen carrots, and bay leaves. Simmer for another 15 minutes.
- In the last five minutes, add chopped white onion and stir well.
- Serve over cooked white rice or enjoy directly from the pot, optionally garnished with oregano.
Notes
For a lighter option, substitute ground beef with ground turkey or use whole grain conchitas for added fiber.
