Ingredients

  • 1 cup all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1/2 tsp kosher salt
  • 1/2 cup vegetable oil
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 4 Tbsp unsalted butter, melted
  • 3 large eggs
  • 1 Tbsp light corn syrup
  • 1 tsp pure vanilla extract
  • 1 cup semisweet chocolate chips
  • 6 Tbsp heavy cream
  • Rainbow chips, for serving

Instructions

  1. Preheat your oven to 350°F. Line a 9″ x 9″ baking pan with parchment paper and coat it with cooking spray.
  2. In a medium bowl, whisk together the flour, cocoa powder, and salt.
  3. In a separate bowl, whisk together the vegetable oil, brown sugar, granulated sugar, and melted butter until smooth. Add eggs, corn syrup, and vanilla; whisk until fully incorporated.
  4. Incorporate the dry ingredients into the wet mixture and stir until just combined. Pour the batter into the prepared pan and smooth the top.
  5. Bake for about 25 minutes, or until a tester inserted into the center comes out with a few moist crumbs.
  6. Let the brownies cool completely. For the ganache, heat heavy cream until it simmers, then pour it over the chocolate chips. Let it rest for 1 minute, then whisk until smooth.
  7. Pour the ganache over the cooled brownies and sprinkle with rainbow chips. Refrigerate for about 20 minutes until set.
