Description

A hearty casserole combining ground beef and crispy tater tots, perfect for family gatherings or weeknight dinners.


Ingredients

  • 1 lb lean ground beef
  • 1 medium yellow onion, chopped
  • 1 cup bell peppers, chopped (choose your favorite colors)
  • 1 can (15 oz) canned corn, drained
  • 1 cup sharp cheddar cheese, shredded
  • 32 oz frozen tater tots
  • 2 tsp chili powder
  • 2 tsp garlic powder
  • ½ cup milk or cream
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet over medium heat, heat a splash of olive oil. Add the chopped onions and bell peppers, sautéing for about 5 minutes until tender.
  3. Add the ground beef to the skillet, cooking until browned and crumbly. Drain excess fat.
  4. Stir in the corn, chili powder, garlic powder, salt, and pepper, then pour in the milk or cream. Let simmer for 3 to 5 minutes.
  5. Transfer the mixture into a greased baking dish and spread evenly.
  6. Top with cheddar cheese and arrange the tater tots on top.
  7. Bake for 25 to 30 minutes until the tater tots are golden brown and the cheese is bubbling.

Notes

For added flavor, incorporate diced jalapeño or serve with sour cream or guacamole.
