- 4 salmon fillets (skin removed)
- 8 oz lump crab meat
- 12–16 medium shrimp (peeled and cleaned)
- 1 pack Boursin Shallot & Chive cheese
- 2 tablespoons olive oil
- 4 oz frozen spinach (thawed)
- 1 jalapeno (diced)
- 1/4 cup grated parmesan cheese
- Salt and ground pepper (to taste)
- 1/2 teaspoon smoked paprika
- 1 teaspoon Cajun seasoning
- 2 teaspoons garlic (minced)
- 2 tablespoons unsalted butter (melted)
- Juice of 1 lemon
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Rub the salmon fillets with olive oil and season with salt, pepper, smoked paprika, and Cajun seasoning. Create slits in the fillets for stuffing.
- In a bowl, mix together the thawed spinach, Boursin cheese, diced jalapeno, lump crab meat, grated parmesan, and minced garlic.
- Stuff each salmon fillet with the crab mixture and place shrimp on top.
- Drizzle melted butter over the stuffed salmon.
- Bake for 15-17 minutes until salmon flakes easily and shrimp is tender.
- Remove from oven and squeeze fresh lemon juice over the top before serving.
Notes
Use fresh seafood for the stuffing and avoid overstuffing the salmon. Let salmon rest after baking for optimal flavors.
