Description

A delightful dish combining sweet apples and tart cranberries within creamy sweet potatoes, perfect for gatherings or family dinners.


Ingredients

  • 6 medium sweet potatoes
  • 2 medium apples, diced
  • 1 cup cranberries
  • 2 tbsp butter
  • 3 tbsp maple syrup
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and bake the sweet potatoes for 45 minutes until tender.
  2. Melt butter in a skillet over medium heat, add diced apples, and sauté for 3 minutes.
  3. Stir in cranberries, maple syrup, cinnamon, and nutmeg, cooking for another 6-8 minutes until cranberries burst.
  4. Remove baked sweet potatoes, let cool slightly, slice in half, and scoop out the flesh. Mash and mix with the apple-cranberry mixture.
  5. Refill the potato skins with the mixture and bake at 375°F (190°C) for 15 minutes.

Notes

Adjust maple syrup sweetness to taste. Choose seasonal apples for best flavor.
