- 6 medium sweet potatoes
- 2 medium apples, diced
- 1 cup cranberries
- 2 tbsp butter
- 3 tbsp maple syrup
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- Salt to taste
Instructions
- Preheat your oven to 400°F (200°C) and bake the sweet potatoes for 45 minutes until tender.
- Melt butter in a skillet over medium heat, add diced apples, and sauté for 3 minutes.
- Stir in cranberries, maple syrup, cinnamon, and nutmeg, cooking for another 6-8 minutes until cranberries burst.
- Remove baked sweet potatoes, let cool slightly, slice in half, and scoop out the flesh. Mash and mix with the apple-cranberry mixture.
- Refill the potato skins with the mixture and bake at 375°F (190°C) for 15 minutes.
Notes
Adjust maple syrup sweetness to taste. Choose seasonal apples for best flavor.
