- 2 garlic cloves, grated or finely chopped
- 4 Tbsp. unsalted butter, melted
- 1 Tbsp. honey
- 1 tsp. kosher salt
- 1/2 tsp. freshly ground black pepper
- 3 cups packed leftover shredded or chopped turkey
- 8 slices sourdough bread
- 8 oz. brie, sliced into 16 slices
- 12 Tbsp. cranberry sauce, divided, plus more for serving
- 4 Tbsp. extra-virgin olive oil, divided
Instructions
- In a medium bowl, combine the grated garlic, melted butter, honey, salt, and pepper. Mix until blended, then add the shredded turkey and toss to coat.
- Layer a slice of bread with two slices of brie, 1½ tablespoons of cranberry sauce, and a quarter of the turkey mixture. Top with more cranberry sauce and another two slices of brie. Cover with another slice of bread and repeat for remaining sandwiches.
- Heat a cast-iron skillet over medium heat and add 2 tablespoons of olive oil. Cook the sandwiches, turning halfway until golden brown and brie is melting, about 2-4 minutes per side.
- Serve hot, accompanied by additional cranberry sauce.
