Description

A delightful bread that combines the tartness of cranberries with the zesty brightness of orange, perfect for any occasion.


Ingredients

Scale
  • 500 g All-Purpose Flour or Bread Flour
  • 100 g Active Sourdough Starter
  • 300 g Room Temperature Water
  • 10 g Salt
  • 100 g Dried Cranberries
  • 1 Large Orange (juice and zest)
  • 25 g Honey

Instructions

  1. In a small bowl, combine the dried cranberries, juice, and zest of one orange. Let them rest.
  2. In a large mixing bowl, add the sourdough starter and water; mix until the starter dissolves.
  3. Add flour, salt, honey, hydrated cranberries, and orange mixture; mix until a shaggy dough forms.
  4. Cover the bowl with a damp cloth and let rest for 1 hour.
  5. Perform 3-4 stretch and folds every 30 minutes for the next 2 hours during the rise period (total rise time is 6-8 hours).
  6. Shape the dough into a round boule and place it in a floured banneton for cold fermentation if not baking immediately.
  7. Preheat oven to 450°F (230°C) with a Dutch oven inside.
  8. Transfer shaped loaf into the Dutch oven, score the top, cover, and bake for 30 minutes.
  9. Remove the lid and bake for another 30 minutes until golden brown.

Notes

For a deeper sourdough flavor, extend fermentation time. To enhance sweetness, swap honey for a low-calorie sweetener.
