- 500 g All-Purpose Flour or Bread Flour
- 100 g Active Sourdough Starter
- 300 g Room Temperature Water
- 10 g Salt
- 100 g Dried Cranberries
- 1 Large Orange (juice and zest)
- 25 g Honey
Instructions
- In a small bowl, combine the dried cranberries, juice, and zest of one orange. Let them rest.
- In a large mixing bowl, add the sourdough starter and water; mix until the starter dissolves.
- Add flour, salt, honey, hydrated cranberries, and orange mixture; mix until a shaggy dough forms.
- Cover the bowl with a damp cloth and let rest for 1 hour.
- Perform 3-4 stretch and folds every 30 minutes for the next 2 hours during the rise period (total rise time is 6-8 hours).
- Shape the dough into a round boule and place it in a floured banneton for cold fermentation if not baking immediately.
- Preheat oven to 450°F (230°C) with a Dutch oven inside.
- Transfer shaped loaf into the Dutch oven, score the top, cover, and bake for 30 minutes.
- Remove the lid and bake for another 30 minutes until golden brown.
Notes
For a deeper sourdough flavor, extend fermentation time. To enhance sweetness, swap honey for a low-calorie sweetener.
