- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar (divided)
- 16 oz cream cheese, softened
- 1 cup sour cream
- 1 cup white chocolate chips
- 1 cup cranberry sauce
- 3 large eggs
- 2 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the graham cracker crumbs with melted butter and 2 tablespoons of sugar. Stir until well blended to form the crust mixture.
- Press the crust mixture firmly into the bottom of a springform pan.
- In a large mixing bowl, beat the cream cheese until smooth. Gradually add the remaining sugar, sour cream, and vanilla extract, mixing until well combined.
- Melt white chocolate chips in the microwave until smooth, then mix into the cream cheese mixture.
- Add the eggs one at a time while mixing on low speed.
- Pour half of the cheesecake batter into the prepared crust, dollop the cranberry sauce over it, and then pour the remaining batter on top, swirling gently.
- Bake for 50-60 minutes until the edges are set and the center jiggles slightly.
- Remove from the oven and allow cooling before refrigerating overnight.
Notes
Ensure cream cheese is at room temperature for smooth mixing. For best results, chill overnight before serving.
