- 2 pounds Russet potatoes, peeled and cut into 1-inch cubes
- 4 tablespoons unsalted butter
- 1 cup whole milk (or half-and-half for extra creaminess)
- 1 package (5.2 ounces) Boursin cheese (garlic & herbs flavor recommended)
- Salt, to taste
- Freshly ground black pepper, to taste
- Chopped fresh chives or parsley, for garnish (optional)
Instructions
- Place the peeled and cubed potatoes in a large pot and cover with cold water, about an inch above the potatoes.
- Add a pinch of salt and bring to a boil over medium-high heat. Reduce heat and let simmer until fork-tender, about 15-20 minutes.
- Measure out butter and milk (or half-and-half) in a saucepan and heat over low heat until warm.
- Drain the potatoes and return them to the pot. Heat on low for 1-2 minutes to evaporate excess moisture.
- Using a potato masher, mash the potatoes to your desired consistency.
- Add the warmed butter and milk mixture to the potatoes and stir until creamy and smooth.
- Fold in the Boursin cheese until fully incorporated. Season with additional salt and pepper as needed.
- Transfer mashed potatoes to a serving bowl and garnish with chopped chives or parsley if desired.
