Creamy Boursin mashed potatoes offer a rich, herb-infused twist on a classic comfort food, perfect for any occasion.


Ingredients

  • 2 pounds Russet potatoes, peeled and cut into 1-inch cubes
  • 4 tablespoons unsalted butter
  • 1 cup whole milk (or half-and-half for extra creaminess)
  • 1 package (5.2 ounces) Boursin cheese (garlic & herbs flavor recommended)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Chopped fresh chives or parsley, for garnish (optional)

Instructions

  1. Place the peeled and cubed potatoes in a large pot and cover with cold water, about an inch above the potatoes.
  2. Add a pinch of salt and bring to a boil over medium-high heat. Reduce heat and let simmer until fork-tender, about 15-20 minutes.
  3. Measure out butter and milk (or half-and-half) in a saucepan and heat over low heat until warm.
  4. Drain the potatoes and return them to the pot. Heat on low for 1-2 minutes to evaporate excess moisture.
  5. Using a potato masher, mash the potatoes to your desired consistency.
  6. Add the warmed butter and milk mixture to the potatoes and stir until creamy and smooth.
  7. Fold in the Boursin cheese until fully incorporated. Season with additional salt and pepper as needed.
  8. Transfer mashed potatoes to a serving bowl and garnish with chopped chives or parsley if desired.
