Ingredients

- 1 lb shrimp, fresh, peeled, and deveined
- 4 cloves garlic, minced
- 1 cup heavy cream
- 2 tablespoons butter
- Salt and pepper, to taste
- 2 lbs potatoes, peeled and chopped
- 1/2 cup milk
- 1/4 cup sour cream
- Chives for garnish
Instructions
- Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and mash with milk, sour cream, salt, and pepper to desired consistency.
- Melt butter in a skillet over medium heat, add garlic and sauté for about 30 seconds.
- Add shrimp and cook until pink, about 3-4 minutes.
- Pour in the heavy cream, reduce heat to low, and simmer, stirring occasionally, until thickened.
- Serve the shrimp over the mashed potatoes, garnished with chopped chives.
Notes
For added richness, sauté diced onions with the garlic or add crushed red pepper for heat. Consider garnishing with grated Parmesan cheese.
