Ingredients

  • 8 ounces burrata cheese
  • 1 cup cherry tomatoes
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon balsamic vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon fresh basil, finely chopped
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • 1 teaspoon lemon zest
  • Salt and black pepper to taste
  • A pinch of red pepper flakes (optional)
  • Fresh basil leaves for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, toss cherry tomatoes with 1 tablespoon olive oil, balsamic vinegar, minced garlic, salt, and black pepper.
  3. Spread the tomatoes on a baking sheet and roast for 15-20 minutes until blistered.
  4. In a small bowl, combine 1 tablespoon olive oil with chopped basil, parsley, chives, lemon zest, and red pepper flakes.
  5. On a serving plate, arrange the burrata balls and drizzle with the herb-infused oil.
  6. Carefully add the roasted tomatoes around the burrata and drizzle any baking juices over them.
  7. Garnish with fresh basil leaves and serve immediately.

Notes

Allow the burrata to rest in herb oil for at least 30 minutes for enhanced flavor.
