- 8 ounces burrata cheese
- 1 cup cherry tomatoes
- 2 tablespoons extra virgin olive oil
- 1 teaspoon balsamic vinegar
- 2 cloves garlic, minced
- 1 tablespoon fresh basil, finely chopped
- 1 tablespoon fresh parsley, finely chopped
- 1 tablespoon fresh chives, finely chopped
- 1 teaspoon lemon zest
- Salt and black pepper to taste
- A pinch of red pepper flakes (optional)
- Fresh basil leaves for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, toss cherry tomatoes with 1 tablespoon olive oil, balsamic vinegar, minced garlic, salt, and black pepper.
- Spread the tomatoes on a baking sheet and roast for 15-20 minutes until blistered.
- In a small bowl, combine 1 tablespoon olive oil with chopped basil, parsley, chives, lemon zest, and red pepper flakes.
- On a serving plate, arrange the burrata balls and drizzle with the herb-infused oil.
- Carefully add the roasted tomatoes around the burrata and drizzle any baking juices over them.
- Garnish with fresh basil leaves and serve immediately.
Notes
Allow the burrata to rest in herb oil for at least 30 minutes for enhanced flavor.
