Description
A deliciously satisfying dish featuring thick udon noodles coated in a rich peanut sauce, brightened by fresh herbs and lime.

- 200g Udon noodles
- 100g Creamy peanut butter
- Fresh herbs (cilantro or basil)
- 1 tsp Chili flakes or fresh chili
- 2 tbsp Lime juice
- 3 tbsp Soy sauce
- 2 cloves Garlic, minced
- 1 inch Ginger, grated
- 1 tbsp Vegetable oil
Instructions
- Cook the Udon Noodles according to the package instructions. Drain and set aside.
- In a mixing bowl, combine the peanut butter, lime juice, soy sauce, minced garlic, and grated ginger. Whisk until smooth.
- In a sauté pan, heat the vegetable oil over medium heat and sauté the chili flakes for about a minute.
- Add the cooked udon noodles to the pan and pour the peanut sauce over them. Toss gently to coat.
- Fold in fresh herbs and cook on low heat for a few more minutes until warmed through.
- Serve warm, garnished with additional herbs and lime wedges.
Notes
For extra flavor, add a splash of sesame oil. You can also adjust the spice level and incorporate sautéed vegetables for more nutrition.
