Description

A deliciously satisfying dish featuring thick udon noodles coated in a rich peanut sauce, brightened by fresh herbs and lime.


Ingredients

Scale
  • 200g Udon noodles
  • 100g Creamy peanut butter
  • Fresh herbs (cilantro or basil)
  • 1 tsp Chili flakes or fresh chili
  • 2 tbsp Lime juice
  • 3 tbsp Soy sauce
  • 2 cloves Garlic, minced
  • 1 inch Ginger, grated
  • 1 tbsp Vegetable oil

Instructions

  1. Cook the Udon Noodles according to the package instructions. Drain and set aside.
  2. In a mixing bowl, combine the peanut butter, lime juice, soy sauce, minced garlic, and grated ginger. Whisk until smooth.
  3. In a sauté pan, heat the vegetable oil over medium heat and sauté the chili flakes for about a minute.
  4. Add the cooked udon noodles to the pan and pour the peanut sauce over them. Toss gently to coat.
  5. Fold in fresh herbs and cook on low heat for a few more minutes until warmed through.
  6. Serve warm, garnished with additional herbs and lime wedges.

Notes

For extra flavor, add a splash of sesame oil. You can also adjust the spice level and incorporate sautéed vegetables for more nutrition.
